An intriguing trend in Paris at the moment is the “mono-restaurant” serving variations of just one product. In Saucette’s case it’s sausage, but not just your average sausage. We’re talking artisanally made, innovatively flavored, non-greasy sausage, created in the on-site atelier or sourced from some of France’s best producers. Tuck into pork and ginger saucisses or try the beef and sesame variety (you’ll have eight flavors to choose among), the lot wrapped in homemade hot dog–style bread or in a galette (Brittany pancakes made with sarrasin flour). Can’t decide? The sausage platter’s a good option, with four delights to sample. As for the sides, expect tasty hand-cut fries, a variety of slaws, and sauces that go well beyond ketchup.
